In a kitchen behind a courtyard in old Hyderabad, our great-grandmother stirred her first batch of avakaya in a clay urn the size of a child. She wrote nothing down. She didn't need to. Her daughter watched. Then her granddaughter. Now we are the fourth generation of women keeping that recipe alive — and the only thing that's changed is the postal address it ships to.
