— The recipe —

It started with one woman, one stone, and a basket of mangoes.

In a kitchen behind a courtyard in old Hyderabad, our great-grandmother stirred her first batch of avakaya in a clay urn the size of a child. She wrote nothing down. She didn't need to. Her daughter watched. Then her granddaughter. Now we are the fourth generation of women keeping that recipe alive — and the only thing that's changed is the postal address it ships to.

three things we never skip

Sun-dry

Mangoes, lemons, raw turmeric — laid out on cotton on the terrace for as many days as the sun takes. No dehydrators.

Stone-grind

Spices are roasted that morning and stone-ground while still warm. The oils stay where the flavour lives.

Hand-fill

Every jar is filled by hand, wax-sealed, and tied with cotton twine. Your name goes on the parcel that afternoon.

The mangoes you taste in our avakaya grew on three trees we've been watering for sixteen years. The turmeric we grind ourselves came out of red Telangana soil four months ago. Nothing on this site travelled further than the back of a basket before it became a jar.
